Between school and Facebook, I don’t seem to have very much of a life right now, much less time to cook. This recipe is good because it is fast and easy. Two of my favorite words.
1.5 lbs lean ground beef/turkey
3 C tomato sauce (1 large can)
1 Can black beans (15 oz)
1 Can white kidney beans (15 oz)
1 Can corn (15 oz)
1 Can green beans, drained (15 oz)
1 Can diced tomatoes (15 oz)
1 onion, chopped
1 bell pepper, chopped
3 cloves garlic, minced
1 tsp coconut oil
Brown meat in skillet. Drain excess fat.
Sautee onions, bell pepper, and garlic in coconut oil until slightly softened.
Combine all in crockpot.
¼ C all-purpose flour 2 t dried parsley
4 t chili powder 1 T crushed red pepper
2 t brown sugar 2 t ground cumin
2 t salt 1 t dried basil
¼ t ground black pepper
Mix spiced together in a bowl until well blended. Add to crockpot and stir well. Can be stored in an airtight container.
So go for it! Make it and eat it and tell me if you like it! And for the love of cheese, don’t skip the green beans just because it sounds weird!
